What an amazing venue – trendy setting with the most incredible views to sit and enjoy a drink or two and some amazing food.  The standard of dining seems to have lifted of late and I am led to believe that there is a new young talented chef who is now on board.  This young chef Dave Kapay has been living and working in London for the past fours years and has worked and learnt from some of the best.  Jamie Oliver at Fifteen in London, along with one of the Italian guru’s Gennaro Contaldo, who imparted all his pasta making and Italian flavours to the young Chef. He also brings some of the Gordon Ramsay philosophies after spending some time as a Sous Chef in the Ramsay stable at Maze in London.  The addition to the ranks of this young chef will no doubt play a big part in elevating the status of Republica to an upper echelon of the Melbourne culinary world.  Look forward to many more visits to guage the journey.
